Chicken Thighs and Veggies

Looking for a good basic meal to cook for your family in your slow cooker? This one has a nice combination of chicken, potatoes, and veggies. You won't have anything extra to do when you get home from a long day at work.

Ingredients:
1 Medium Onion, quartered
12 Small Red Skin Potatoes
2c Baby Carrots
1/4c Chicken Broth
1/4c Dry White Wine
1 tsp Minced Garlic
1/2 tsp Dried Thyme
1 1/4 tsp Salt, divided
1/2 tsp Pepper, divided
1 tsp Paprika
6 Bone-in (or boneless), skinless chicken thighs (I used boneless)


Chop the onion and potatoes in quarters.


Combine the broth, wine, garlic, thyme, 3/4 tsp salt, and 1/4 tsp pepper in a bowl.


Sprinkle the paprika, 1/2 tsp salt, and 1/4 tsp pepper over the chicken thighs.


Place the onion, potatoes, and carrots in the bottom of the crock pot. Pour the mixture over the vegetables.

Lay the chicken on top of the vegetables.


Cover and cook on High for 1 hour. Reduce the heat to Low and cook 6-7 hours.


Your whole dinner is complete in 1 slow cooker. I think this was a great classic Sunday dinner.
