Potato and Corn Chowder

Last weekend I needed to make a dish to pass at the Superbowl party. I figured a soup would be a great option to fill up on something healthy.

Ingredients: (Serves 6-8)
6 Slices of Crisp-cooked bacon, crumbled
2 1/2 - 3c Potatoes
1/2c Onions
1 - 16 oz Can of Corn
3c Chicken Broth
1 tsp Salt
1/4 tsp Peppper
1 - 12 oz Can of Evaporated Milk

Chop the bacon and cook until crispy in a frying pan.

Chop the potatoes

Place all the ingredients in the slower cooker.

Cover and cook on Low for 8 to 10 hours or High for 4 hours.

Add the milk, cover, and cook for 30 - 45 more minutes.

I served the soup with green onion and shredded cheese. It tasted so good. I got a ton of compliments on it at the party!
