Beef Bourguignon

My mom picked out a new recipe for me to try for our Sunday dinner. I modified it some and relaxed the rest of the day while dinner cooked.

Ingredients: (Serves 6)
6 Slices of Bacon - You could use turkey bacon instead of regular
3 lb Beef Round Steak, cut into cubes
1 Large Onion, peeled and sliced
1/2 lb Baby Carrots
4 Peeled Potatoes
3 Tbsp Flour
1 Can of Beef Broth
1 Tbsp Tomato Paste
2 Garlic Cloves, minced
1/2 tsp Thyme
1 Whole Bay Leaf
1 lb Fresh Mushrooms, sliced
1/2 c Burgundy Wine

Cook the bacon until crispy in a skillet.


Brown the beef round steak in a frying pan.


Put the bacon and beef round steak in the slow cooker.


Saute the onion slices and carrots in the skillet.


Add the onions and carrots to the slow cooker along with the rest of the ingredients except the mushrooms and wine. Mix well.


Cover and cook on low for 8 hours.


About 1 hour before serving, add the mushrooms and wine to the slow cooker.


Dinner is served.


I suggest making the recipe with an extra 1/2 lb of pearl onions. The sliced onions disappeared. Also, we couldn't really taste the bacon. I actually wouldn't use any bacon at all next time.

If you like the flavor of wine, I think you will like this meal.
