My grandpa suggested that I make rice pudding for my husband since he loves rice. I've actually never had rice pudding before. So I figured I should take my grandpa's suggestion!
Ingredients:
3/4 c Short Grain Rice - I used Arborio
1 - 13.5 oz Can of Evaporated Milk (Skim or Lowfat)
2 c Water
1/3 c Splenda
1/2 c Raisins
1 1/2 tsp Vanilla
3/4 tsp Salt
1/2 tsp Ground Cinnamon or a Cinnamon Stick
It looks like Bob's Red Mill makes a short grain brown rice. I wonder how the texture would be using that. It would make it healthier! Let me know if you try it.

Combine all of the ingredients in the slow cooker and that's all!

Cover and cook on Low for 4 hours or High for 2 hours. I cooked on low for 4 hours and it was pretty thick and sticky. If you're looking for a thinner pudding, I suggest cutting it down to 3.5 hours.
